Quick answer: Millet makes fast, warm-season hay with one big safety edge — unlike sorghum-sudangrass it produces no prussic acid. When you need summer feed in a hurry — a prevent-plant field, a double-crop after wheat, or just a cheap annual to stretch the hay supply — millet is one of the easiest crops to get in the ground. It sprouts fast, shrugs off heat, and cattle, as one grower put it, "really lick it up." But millet trips up first-timers on three things: which millet they actually planted, when to cut it, and the nitrate question. The millets that make hay: pearl, foxtail, and Japanese
"Millet" is not one plant — it is a loose group of unrelated warm-season annual grasses, and the type you plant changes everything about how you hay it. Three show up in hayfields, and they behave very differently.
- Pearl millet (Pennisetum glaucum) is the tall one — 4 to 8 feet — and the most productive. It regrows after cutting, so you can take two or three cuttings, and it is the go-to for grazing and hay across the South. Its stems are thick, which matters at drying time.
- Foxtail millet (Setaria italica) — sold as German, Siberian, or hay millet — is shorter and finer-stemmed. It matures in 60 to 70 days, cures more easily, and is essentially a one-cut crop with little regrowth. Its weakness is lodging.
- Japanese millet (Echinochloa esculenta, called Shirohie in Australia) tolerates wet, even briefly flooded ground that would drown other summer annuals, and it can be cut before boot for a second cutting.

Millet's big safety edge — and the nitrate catch
Here is the reason a lot of growers choose millet over other summer annuals: millets do not produce prussic acid (hydrogen cyanide). Sorghum, sudangrass, and sorghum-sudangrass hybrids all can, especially after frost or drought, which forces you to wait and watch before grazing or green-chopping them. Millet skips that risk entirely (University of Nebraska–Lincoln CropWatch). If you have grown sorghum-sudangrass and sweated the prussic-acid window, millet is a simpler animal.
That said, millet is not risk-free — it trades the prussic-acid problem for a nitrate one. Under drought stress and heavy nitrogen, millet (like most summer annuals) can pile up nitrate in the lower stalk. And here is the part that catches people: unlike prussic acid, nitrate does not gas off as the hay cures. It stays in the bale. You cannot dry your way out of it. A grower who has baled a lot of it put it plainly:
"If present, plant stalks can be cut higher than 4 inches to also help lessen nitrate poisoning. As you probably already know, nitrate poisoning never leaves stored hay."

Four habits keep nitrates in check:
- Raise the cutter bar. Nitrate concentrates in the bottom of the stem, so cutting above 4 inches — higher on drought-stressed fields — leaves the worst of it behind.
- Do not overdo nitrogen. Match N to a realistic yield goal; excess N with no rain to grow it is exactly the recipe for high-nitrate forage.
- Wait a few days after a drought-breaking rain. A stressed crop pulls a nitrate surge when rain finally comes. Growers pass this warning down the line:

When to cut millet for hay
Cutting stage is the single biggest quality lever, and it is a straight trade-off between protein and tonnage. Cut early and you get leafy, high-protein hay that dries faster; wait for the heads and you get more bulk but coarse, stemmy hay that is slow to cure. Growers describe the choice the same way every time:
"If you're looking for the highest crude protein then you would cut in the pre to early boot stage. If you're looking for volume, the most hay, then you would wait for the plant to head out."

For hay, boot to early head is the sweet spot — enough tonnage without the stemmy, hard-to-dry heads. Cutting stage also decides your regrowth. With pearl and Japanese millet, cut before or at boot and leave stubble, and the crop regrows for a second (and sometimes third) cutting. Foxtail/German millet is largely one-and-done. The practical rule reconciles regrowth with the nitrate note above: err toward the higher side of the cutter-bar range. Leaving 4 to 8 inches of stubble on pearl millet both feeds the regrowth and leaves the highest-nitrate stem bases in the field.
Drying millet: coarse stems, mold, and dust
Millet's thick stems are the reason it has a reputation for being slow to cure. The leaves feel dry long before the stems do, and a bale that felt ready can heat and mold from the moisture still locked in those stalks — a problem that gets far worse once the plant has headed:
"Only type of Millet that I've baled is Pearl. I cut it after it had headed and it took forever to dry enough not to mold. I think if heads are still inside stalks it will take a long time to dry enough to not mold after baling."

Three moves speed the cure: run a mower-conditioner or crimper to crack the stems, lay it in a wide windrow, and ted or rake to keep air moving through it. First-time pearl-millet growers reach the same conclusion in the field:

One clever trick for Japanese millet is to plant it with a light rate of oats: the oats mature into dry straw that wicks moisture out of the wetter millet, giving a cleaner, less dusty bale.
"I plant my Japanese Millet with oats, maybe 1 bushel to the acre. The oats mature early and essentially dry out to straw. I have found that the dry oats will draw any moisture out of the millet and leave a rather dust free palatable millet hay."

Baling and net-wrapping millet hay

Either way, protect the crop. A millet round bale is coarse, leafy, and often heavy, and it needs to hold its shape through storage and handling. Frequently asked questions
Does millet contain prussic acid?
No. Pearl, foxtail (German), and Japanese millet do not produce prussic acid (cyanide), which is millet's main safety advantage over sorghum, sudangrass, and sorghum-sudangrass. There is no post-frost or post-drought cyanide waiting period. Millet can, however, accumulate nitrate under drought and heavy nitrogen.
When should you cut millet for hay?
