Oat Hay: When to Cut, How to Dry It, and How to Bale It Solid

Why grow oat hay

They are also the classic nurse crop: seeded over a new alfalfa or grass planting, then cut for hay to open the canopy and release the young stand underneath.

Here is the honest part: oat hay is fussy, and plenty of growers have sworn it off. "Tried it the last two years small scale — it sucks!" one wrote after fighting the drydown. The difference between very nice oat hay and five acres of straw is almost entirely in two decisions: when you cut and how you get it dry and baled. Nail those and oats reward you. When to cut: boot, milk, or dough

Oat quality is a countdown that starts the day the head emerges. To time it, you read the seed head:

  • Boot: the head is still swelling inside the top leaf sheath, not yet out. Highest protein and digestibility, lowest tonnage.
  • Milk: the head is out and a squeezed kernel oozes a milky white liquid. The classic compromise — strong quality with real yield.
  • Dough: the kernel firms from soft paste to hard. Maximum tonnage, but protein slides and the plant starts turning to straw.

University extension guidance is consistent: for the best balance of quality, yield, and nitrate safety, cut small grains for hay in the late boot to early milk stage. Protein can run in the low-to-mid 20s at boot and fall toward 11 to 12% by dough as fiber climbs. The hard deadline is the far side of milk. One regional caveat: growers in dry, rain-free climates sometimes deliberately wait for dough because they can bank on getting it dry and they want the tonnage, accepting the quality hit. Why oat hay is slow to dry

Oat hay's reputation for being a "bugger to get dry" is real, and it traces to one thing: the stem. Oat stems are thick and sappy, and the swollen joints — the nodes, or what growers call the stem knuckles — hold moisture long after the leaves feel crisp. That is also why boot-stage oats, counterintuitively, can be the hardest to dry.

Four things stack the odds in your favor:

  • Run a conditioner and mean it. Aggressive crimping cracks those nodes so they can give up water. Without it, oats can sit for a week or more.
  • Lay a wide swath. Spread the crop across as much of the cut width as your mower allows to catch sun and airflow, then ted or rake as needed.

Baling oat hay solid

  • Bale at the right moisture. Too dry and the crop shatters and won't pack; too wet — or with green nodes — and it heats. Aim for proper dry-hay moisture through the whole stem, not just the leaf.
  • Keep density up. Slow down, feed the baler a full, even windrow, and let it build a tight, heavy bale core.

Two traps: rats and nitrates

Rats and mice. Cut oats too late and the filled grain in the heads turns your hay into a rodent buffet — one of the oldest complaints in the book, and a real reason to cut before dough.

Oats, like all cereal forages, can accumulate dangerous nitrate levels when they're heavily fertilized with nitrogen or manure and then hit by drought, cloudy weather, or frost. Feeding oat hay: cattle vs horses

Beef cattle are the natural home for oat hay. Cows relish it, it makes excellent bulk winter feed, and it's forgiving of a later cut — which is why so much oat hay is baled specifically for the cow herd. Dairy quality is achievable too, but only from an early, leafy cut: "Even had a dairy buy some from me, if put up right," one grower noted.

Horses can do very well on oat hay when it's cut leafy and green, before the grain matures — it's soft, palatable, and a lot of horse owners actively seek it out.
