How to Make Premium Horse Hay: Cutting, Curing, and Selling It

Short answer: Premium horse hay is decided at cutting, not at baling. Cut grass hay in the early boot stage, before the seed head emerges — once the stem is coarse, nothing downstream makes it soft again. Then keep the leaves on and get it dry: bale grass hay at 12–14% moisture and alfalfa at 14–15%, because mold starts above roughly 15% and mold is the single fastest way to lose a horse customer permanently. Everything else — color, smell, bale weight, consistency — is secondary to those two decisions.

There is a specific kind of frustration in hay farming: you put up a crop that tests well, weighs right, and looks fine in the stack, and the horse people still walk away from it. Meanwhile a neighbor with worse ground gets $2 more a bale and has a waiting list.

The gap is almost never the fertilizer program. It is usually one of two decisions made weeks apart — when you cut and how dry you baled — plus a hard truth about who actually defines the product.

That sounds like a dodge. It is not. It is the most useful sentence in this article, and we will come back to it.


Why "soft" is decided before you ever start the mower

Ask ten horse owners what they want and you will get ten different vocabularies, but the word that keeps coming back is soft. Soft hay is not a curing outcome. It is a maturity outcome.

Grasses build lignin — the structural stiffening compound — as they move toward reproduction. Once the seed head emerges and the stem goes coarse, that lignin is in the plant permanently. No tedder setting, no dew, no preservative, and no amount of careful baling converts a stemmy crop back into a soft one.

The practical rule from producers who sell into the horse market consistently: cut grass hay in the early boot stage, when the seed head is still down inside the sheath and you can feel it as a swelling but cannot see it. That is often a week to ten days earlier than you would cut the same field for cows.

You pay for this. Early-boot cutting costs you tonnage — realistically 15–25% less dry matter per acre than letting the crop head out — and it demands you cut on a calendar the weather may not cooperate with. What you buy is the only version of the crop a horse customer will call soft.

This is the first place most producers get the economics backwards. They optimize tons per acre, then try to sell the result as a premium product. The horse market pays per bale for a quality attribute, not per ton for volume. If you are going to chase that market, you have to accept the yield hit as the cost of entry.

Mold is the only true disqualifier

Color gets discussed endlessly. Color is a tiebreaker. Mold is a veto.

Horses are uniquely bad candidates for moldy forage. They cannot vomit, their large colon is a fermentation vat with two narrow flexures that impact easily, and their lower airway responds to fungal spores with persistent inflammation. A cattle producer who feeds slightly musty hay usually gets away with it. A horse owner who does may get a colic bill or a horse that coughs for the rest of its working life.

The moisture threshold is not mysterious. Mold growth becomes likely above roughly 14–15% moisture in stored hay. Below that, the water activity is too low for fungal growth to establish; above it, you are running a slow incubator inside every bale in the stack.

Working targets used by producers selling into the horse market:

  • Grass hay, small squares: 12–14%. Lower end if it is going into a tight stack or a closed barn.
  • Alfalfa, small squares: 14–15%. Alfalfa stems hold internal moisture longer than the leaves suggest, so the reading you take matters (see below).
  • Anything above 16%: not horse hay. It may be perfectly good cow hay. Sell it as cow hay and keep your reputation.

The reason to be disciplined about this is that mold is a trailing defect. It is not visible on baling day. It shows up six weeks later in the middle of the stack, in bales you have already sold, to a customer who now has a sick horse and your phone number. That asymmetry — cheap to prevent, catastrophic to discover late — is why experienced producers treat the moisture number as a hard gate rather than a guideline.

How to actually know your moisture

"Feels about right" is how most stacks get made and it is also how most mold problems start. Hand-feel systematically underestimates stem moisture in alfalfa and in heavy grass, because the leaves dry first and the leaves are what your hand touches.

Two practical methods, in order of how much you should trust them:

1. A probe meter, used correctly

An $80 pin-probe tester is genuinely adequate for the dry-hay range, which is the only range that matters here. The failure mode is not the meter, it is the sampling: one reading from the outside of one bale tells you almost nothing. Take readings from several bales across the field, push the probe into the dense center of the flake, and treat the highest reading as your real number, not the average. 2. The microwave test, when you need ground truth

This is the calibration check that keeps a meter honest, and it costs about $50 in equipment:

  1. Chop a representative sample and weigh out 100 grams on a gram scale.
  2. Spread it on a microwave-safe plate with a cup of water in the corner of the oven (the water keeps the sample from igniting).
  3. Microwave 2 minutes, then reweigh.
  4. Continue in 1-minute bursts, reweighing each time, until the weight stops dropping.
  5. Moisture % = (starting weight − final weight) ÷ starting weight × 100. Starting from 100 g makes the arithmetic trivial: a final weight of 87 g means 13% moisture.

One piece of practical advice repeated by everyone who has done this: do not run this test in the house kitchen. It smells like a barn fire and it will cost you more domestically than it saves you agronomically. Use a shop microwave.


Keeping the leaves on the hay

Leaves carry the protein, the digestible energy, and most of the visual quality a buyer responds to. In alfalfa, leaves are roughly half the plant's dry matter and a much larger share of its feed value. Shatter them and you have converted premium hay into expensive stems.

Leaf retention is a humidity problem, and there is a rule of thumb that has circulated on the hay forums for years because it works. From a long-time Texas producer:

"If the air next to the hay is 90% humidity THEN the hay will be at least 40% moisture and can be raked or have a tedder used with minimal leaf shattering. That means Here when I rake it is at first light when there is still some dew.

If the Air next to the hay is at 70% humidity then cured hay will be no less than 18% moisture. […] If the Air next to the hay is at 55% humidity then the hay will be less than 12% moisture and have excessive leaf shatter."

The operational translation: handle the crop when the air is damp and bale when it is not. Rake at first light with dew still on it. Bale in the late morning or early afternoon once the stems have given up their moisture but before the relative humidity collapses into the shatter range.

Dust: the defect your buyer's vet will find

Dust is the quality problem most producers underweight, because it is nearly invisible in the stack and extremely visible when a flake gets shaken out in a stall.

The clinically relevant fraction is respirable particles under about 5 microns — small enough to bypass the upper airway and deposit deep in the lung. These drive equine asthma (previously called RAO or heaves) and inflammatory airway disease. The prevalence is higher than most people assume: a large share of stabled horses show subclinical airway inflammation, which is precisely why performance-horse owners are so aggressive about hay selection.

Three separate things all get called "dusty hay," and they have different causes:

  • Mold spores — from baling too wet. Fixed by the moisture discipline above.
  • Soil — from raking too aggressively, scalping, or working ground that was wet when you mowed. Fixed with rake settings and cutting height.
  • Shattered leaf and plant fines — from over-handling dry hay. Fixed with the humidity timing above.

Species, fescue, and the broodmare problem

Most cool-season and warm-season grasses make acceptable horse hay if they are cut early and cured dry. Timothy and orchardgrass have the strongest brand recognition with horse buyers; smooth brome, orchard-timothy mixes, and well-managed bermudagrass all sell fine.

There is one genuine agronomic landmine, and it is worth knowing precisely because it is the difference between a good customer and a lawsuit-adjacent conversation.

Endophyte-infected tall fescue. The fungal endophyte produces ergot alkaloids — principally ergovaline — which cause fescue toxicosis. In pregnant mares in late gestation the consequences are severe and well documented: prolonged gestation, agalactia (failure to produce milk), thickened or retained placenta, dystocia, and increased foal mortality. The standard veterinary recommendation is to remove pregnant mares from endophyte-infected fescue 60 to 90 days before the expected foaling date. What this means for you as a producer is narrow but non-negotiable: if you have tall fescue in the stand, say so. Selling fescue hay to a geldings-and-trail-horses customer is completely fine. Selling it, undisclosed, to a breeding operation is how you end up with a dead foal and a permanent reputation problem in a market that talks to itself constantly. The second species-adjacent risk is metabolic. Horses with insulin resistance, equine metabolic syndrome, or a laminitis history need low non-structural carbohydrate forage, and that is a testing question rather than a species question. One final handling note worth passing to customers: abrupt changes in hay type can cause impaction colic. When a buyer switches from your hay to someone else's, or from one cutting to a very different one, the transition should happen over 7–10 days. Telling them this unprompted is free and it marks you as someone who knows the animal, not just the crop.


Package, storage, and what horse buyers pay for

The horse market is the last stronghold of the small square bale, and the reason is entirely practical: a 45–60 lb bale is what one person can handle alone, and flakes are a convenient feeding unit. If you want the top of this market, small squares are usually the price of admission.

What buyers actually evaluate, roughly in order:

  1. Smell. Opened flake should smell sweet and grassy. Any musty, sharp, or "old barn" note ends the sale.
  2. Consistency. Uniform bale weight and uniform flake count matter more than most producers think — boarding barns feed by the flake and hate variance.
  3. Softness and leaf. The maturity decision, showing up at the point of sale.
  4. Color. Green sells. It is a weak proxy for feed value but a strong proxy for "stored inside and not rained on."
  5. Storage history. Undercover, off the ground, no weather.

Round bales absolutely sell into the horse market too — pasture boarding operations, larger private farms, and rescue operations buy them routinely. The requirements are different but not looser: buyers want tight, dense, well-formed 4x5 rolls that were stored under cover, and they want the binding to come off clean.

One customer segment worth naming: Amish and Plain-community buyers are consistently described by producers as premium customers who pay without quibbling, buy predictably year over year, and want exactly this — tight net-wrapped rolls kept undercover. If you are near one of these communities and not selling into it, that is usually a distribution problem rather than a product problem.


Pricing and the customer you actually want

Return to the sentence from the top: horse hay is whatever the person buying it says it is.

What that actually means is that this market has no grading standard, so it runs on trust and repeat relationships. Two consequences follow, and they are the whole commercial strategy.

First, you will meet buyers who want premium quality at commodity prices. The recurring complaint on the producer forums is people shopping for "$150/ton quality at $50/ton prices." You cannot educate these buyers into paying more and you should not try. Quote your price, hold it, and let them go buy someone else's rained-on second cutting.

Second, the customers who do pay are buying reliability, not a single load. A boarding barn that finds a producer who delivers the same soft, dry, consistent hay every year will pay a premium indefinitely to avoid the search cost and the risk of switching feed. That relationship is worth far more than any individual sale, which is why the mold discipline matters so much — one bad lot ends a decade-long account.

Practical positioning that works:

  • Sell by the bale, not the ton, into the small-square horse market. It is what buyers understand and it decouples your price from the commodity conversation.
  • Segment your own crop honestly. First cutting that got rained on is cow hay. Price it as cow hay. Protect the premium label for the lots that earn it.
  • Deliver and stack. Many horse customers have no equipment and no help. Delivery is a genuine service differentiator and it is billable.

Where net wrap fits in a horse-hay operation

If you are making small squares for the horse market, net wrap is not part of that package — twine is, and knotter reliability is your constraint.

Where net wrap does matter is in the part of the operation most horse-hay producers actually run: the rounds. Almost nobody makes only small squares. The first cutting that got weathered, the field edges, the late growth, the lot that came in at 17% — that hay becomes round bales, and how well it holds up in storage determines whether it is worth anything by February.

Two things net wrap does for a horse-hay operation specifically:

  • It sheds water off the shoulder of the bale. A tightly net-wrapped round bale stored outside on a well-drained base loses dramatically less dry matter than a twine-tied bale, because the horizontal wrap sheds rather than wicks. That is the difference between salvage value and no value on your secondary hay.
  • It keeps the bale tight enough to stay clean. Loose, slumped bales collect dirt and grow mold at the ground contact line — exactly the defects that make hay unusable for horses.
